White and black bean chicken chili

It's gray and rainy out and chili sounded good, especially since we probably won't have many more cold days ahead of us for a few months.  I found a recipe for white bean chicken chili on Pinterest, and decided to use that as a base line, but to throw my own concoction together.

Unfortunately, I was tossing everything in as if I really were "concocting" a potion, so some of my measurements are guesses.  Whoops.


Ingredients:

1/2 Yellow onion chopped
2 Cloves garlic pressed or diced finely
1 Tbsp diced canned jalapeños OR 1 small fresh jalapeño diced
1 Tbsp olive oil
2 14.5oz Cans chicken broth
1 14.5oz Can navy beans rinsed
1 14.5oz Can white beans rinsed
1 14.5oz Can black beans rinsed
1  4oz Can diced green chilis
1 Rotisserie Chicken 
1/2 Cup salsa verde
2 Tsp Chili powder
2 Tsp Cumin
1/4 Cup fresh cilantro

To garnish:
1 Avocado
Fresh cilantro
Sour Cream


Let's Cook!


1.  Place olive oil in pan and turn to medium on stove.  Add onion, garlic and jalapeños.  Cook until onions are translucent.  Add to crockpot and turn crockpot heat to high.

2.  Add the broth, beans, green chills, and salsa verde and mix.

3.  Pull the white meat off of the chicken in bite size pieces and add to the crockpot.   For more chicken, add the dark meat as well.  I save the remaining dark meat for other meals such as quesadillas, or a quick topper on salad.

4.  Add the remaining ingredients.  Bring to a boil and turn to low until ready to serve, or keep on high heat if it is not at a rapid boil.

5.  Garnish with avocado, fresh cilantro and sour cream!

Whole30 Tips

As many of you know I have entered the world of Whole30 and am LOVIN it! I can't say it enough, if you are wanting to update your lifestyle habits please give this a try. Is it hard, yes. Will you want to quit, probably but is knowing you are making your body healthier forever worth it, YES. 

I wanted to give a few tips on what has helped us stick with the program.

1. I highly recommend reading the book. It gives you so much detail on why food is good/bad for you, how to do the program, recipes, tips and so much more. This really helped me because it helped me understand WHY you are doing this program. Knowing that I was making food choices because it impacted my health has really helped me stick with the program.

2. PLAN AHEAD. I can almost guarantee that if you do not plan/prep ahead you will not be able to complete this program. Don't quote me on that and I'm sure there's some super human out there that's able to wing it, but not me folks. I need to have food in the refrigerator, lunch planned out and "emergency" snacks in the event that I won't be home. This is key, and this is one of the most important things. I always make sure I have bacon pre-cooked in the fridge (we bake the entire package for the week and then warm it up on the stove when getting ready to eat), veggies pre-cut, fruit ready to go and chicken, beef, sausage ready to go.

3. If possible, buy in bulk. If you have a Costco or Sam's membership I highly suggest buying in bulk. You can buy organic eggs and meat at Costco and I think the price is much better than if you were to buy that much at a regular store. Just saying.... 

4. Be patient with yourself and the program. I'm not done yet, but going through the detox, slowly seeing results and some days still feeling tired are all normal... for me ;) Be patient with yourself, your body and the program. We are so used to "quick fixes" today that we don't even give things a chance to see results. This is your life. 

5. If possible, do the program with a partner! This is just a bonus, but for me, having my husband do the program with me has been so nice and extra motivating. Having someone right there to eat the same foods as you, help you when you're feeling down and just encourage/motivate you along the way has been an extra bonus, and I'm loving it!

DAY 10!!!! WHOLE 30 JOURNEY.....

People of America... this is an urgent announcement. I am officially on DAY 10 of my Whole30 Journey! This is officially the farthest I have ever gone and I'm feeling pretty darn excited about it! (Minus the Shark Tank episode I watched this morning where the product was Cake balls.) I may or may not have wanted to jump through the tv and eat every.single.one. 

But... anyways back to my post ;)

Ok, where were we. I left off with Day 8 which was Monday. I had slightly more energy but Day 9 and Day 10 (today) is when I have felt an energy shift. I am still having random cravings but I feel fully invested this time. 

*What I am about to write next is slightly TMI but... if you're annoyed you can click out. ;) The major difference and I think hurdle I am facing so far with this Whole30 Journey is that it has thrown off my cycle. (NO, NOT PREGNANT). My hormones have been ALL KINDS OF CRAZY! I can literally go from happy-sad-emotional-irritable-irate-annoyed-crying-laughing, all in about 3 seconds. I'm not kidding people, my hormones are out of control. I have done eating plan similar to this before and the same thing happened to me, so I know this is a tell tale sign my hormones need a firm correcting, which is another huge reason I must stick to this plan. I can tell I am literally re-wiring my body- for good!

These last two days, like I said I have seen an increase in energy but I have definitely had some of the bloating, gas, stomach issues they said would happen. I will leave it at that and let your imagination take over. ;) I haven't had my sparkles/sunshine/aha moment yet, but I know it's coming.

Pinterest Win-Mississippi Roast

Many of us are hooked on Pinterest.  There's something fun about sharing ideas, having a way to "pin" them to a digital board for future referral, and find inspiration in other people's creations.  

I've tried MANY Pinterest ideas, as most of us have, and found that some were a complete win and others a fail.  I've decided to share my "wins" and how I altered some of them to create something slightly different.  

This first WIN is a Mississippi roast.  I was drawn to the recipe because of the few ingredients, the fact that it was a convenient crockpot meal, and like most of my food pins…it looked delicious at the time, and sounded great for fall weather!

The only thing I did differently, was the cut of meat that I used.  I couldn't find a 3 pound chuck roast, so I used a 2.15 pound rump roast.  It turned out delicious, with a lot of extra juices in the crock pot.  I served this over mashed potatoes and drizzled the extra juices over as gravy.

Eating Out... Healthy Version

I am a huge fan of enjoying a night out at a yummy restaurant, but when I am trying to eat healthy and stick to a "paleo" diet it is very hard to find a restaurant that is accommodating without all the added ingredients! I know it's possible, but I personally like choosing a restaurant where I don't have to dig through the menu for something healthy. This is why I came up with a list of my top restaurants here in town that offer great healthy and delicious options!! I know there are many more but these are my go-to!

They have fresh and delicious options! They're salads are soo yummy and I love that they have so many fresh ingredients to choose from!



I LOVE Chipotle, and I LOVE that they're chicken has no added hormones/antibiotics. I love getting a salad with guacamole and pico de gallo! Yummmm.



I haven't tried this place yet because I just saw it the other day, but I am BEYOND excited that we have a fresh juice bar here in Colorado! I always love a fresh juice, especially when I'm feeling blah. You know the feeling... so definitely give this place a try! They have juices, smoothies & Acai bowls! 



I LOVE pizza, although I always opt out on the cheese so many would say that's not a "real pizza" but give it a try and I promise you will love it! This place offers the freshest ingredients, gluten free crusts (as an option) and any/all toppings you want! I am a huge fan and love the fresh ingredients.

Fried lemon Dover Sole

I'm one of those people that LOVES seafood…as long as it doesn't taste too fishy.  I like to marinade, drench, and fry my fish to mask that possible fishy flavor.  I know the fishy taste depends on the freshness and variety of fish, but just to be safe…I'll add more sauce ;o)

One of my favorite fish to eat is Dover Sole.  My mom introduced me to this recipe, and I loved its creamy buttery taste and texture! Over the past couple years I've altered a few things for my own taste preferences.



Ingredients:

1-1.5 Pounds of fresh Dover Sole (it's a white meat fish, thinly filleted)
~1.5 Cups flour
~3 eggs
~1 Cup regular breadcrumbs
~1 Cup Panko bread crumbs
~1 Tbsp lemon pepper
~1/2 Tbsp garlic powder
Olive Oil (or vegetable oil)
~ 4 Tbsp butter
1 Lemon


Let's Cook!

1. Place flour in a bowl large enough for the fish.  Crack the eggs into their own bowl large enough for the fish and mix them with a splash of water or milk.  Add the Panko and regular breadcrumbs to a third bowl, mixing them with the lemon pepper and garlic powder.

2. Place oil in frying pan, covering the bottom about 1/4 inch.  Turn to medium-medium/high heat (you may need to experiment with the temperature of your stove.

3.  Take each fillet and cover with flour, then egg mixture, then bread crumb mixture.  Drop into frying pan and fry about 2 min on each side or until golden brown.  This fish is very delicate and flakes easily, so pull it out carefully.  Repeat these steps for each fillet, setting aside on a pan or plate.  

4.  Melt butter in a bowl and squeeze lemon into the butter (half or whole, depends on your liking).  Brush each fillet with the butter/lemon mixture.

5. Tips: If you aren't going to eat the fish right away keep warm in oven.  Heat oven to lowest heat, that's usually around 170 degrees.  Cover plate of fish with foil to keep from drying out in the oven.  I typically serve this with a pesto pasta and veggies.

Smells like Fall

Happy Tuesday!!! Did anyone else notice that it is starting to smell like fall?? I am absolutely LOVING it!! I am a little sad that summer is over because I thought this was such an amazing summer! Well... as amazing as working full time can get ;) I really enjoyed the warm weather, long summer days and lounging by the pool! But... I am always happy to welcome in fall! Fall is probably my favorite season. The crisp feeling in the air, pumpkin spice lattes, scarfs, sweaters and the list goes on! I do have to admit one of my favorite things about fall is... FOOTBALL SEASON!!! This girl LOVES her Broncos!!! With fall also comes this feeling of responsibility to cook and bake more. I mean who doesn't want to gain 10 pounds from October-January?! ;) With that said home girl needs some major recipe inspiration so I am hoping you will leave a comment with some yummy fall *EASY* recipes!!! Here are a list of some of my fav fall recipes!

Homemade Chili
1 Onion
1 LB Hamburger (preferably organic)
2 cans each: Kidney Beans, Black Beans & Pinto Beans
Lg Can of Whole Tomatos
1 Small Can of Whole Tomatos
Salt, Pepper, Chili Powder, Cumin, Garlic, Paprika
(all to taste)

Cut Onion & Cook with Hamburger
While that is cooking pour both cans of tomatos in the blender and mix up until chunky
Drain all cans of beans and rinse well

Once the hamburger/onion is cooked pour in tomatos, beans and season heavily. I do all the seasoning to taste, so you may have to add more as time goes on. Bring to a boil and then let simmer for however long, or throw into the crock pot on low! VOILA- dinner is served!

Semi-homemade Minestrone Soup
2 cans of Progresso Minestrone Soup
1 lb. hamburger or turkey
1 onion
1 can of Rotel
1 can of Italian cut green beans
1 can of Pinto Beans

Cook the hamburger & onion
Once cooked throw everything in and bring to a boil
Put on low and let cook for however long
*I prefer to drain the green beans & pinto beans, but that's up to you
EAT UP & ENJOY!

Homemade Chicken Noodle Soup
1 Rotisserie Chicken
2-3 Carrots
1 Onion
2-3 Pieces of Celery
Salt & Pepper to taste
1-2 32oz chicken broth
Noodles of your choice
Olive Oil

Tear up the rotisserie chicken into small pieces
Cut the carrots, celery & onion
Toss into pot with olive oil, salt, pepper
When tender put in the rotisserie chicken & chicken broth
Taste & season the way you like

*I usually cook my noodles separately and then throw into the soup, or you can throw the noodles into the soup and let cook*

Let cook for 20-30 mins on low.

Dining with the King

I have a lot of friends who I'd consider MORE "religious" than I am, and I respect them for their commitment and devotion (and understanding) towards their beliefs.  I also admire those that use their talents, education and passion to humbly support people that may need them.  

With that I introduce you to Melia Moore!

Melia and I met through a friend at an Isagenix conference a couple years ago.  I instantly loved her because of her calm and happy demeanor, not to mention her incredible beauty on the outside but more importantly on the inside!  She is a genuine soul which is hard to find anymore.

I noticed through her Facebook posts that she was up to a new adventure, "Dining with the King," and I wanted to know more.  The following is an interview between Melia and myself, read on to learn how she is supporting woman through emotional eating/binging with biblical based coaching and nutritional support!




What is Dining with the King?

Dining with the King is a biblical based coaching program for those who struggle with emotional eating or binging. But really it’s pretty simple; it’s hope and an opportunity for freedom. It’s not however a quick fix program and in 30 days you’ll be rid of every unhealthy eating habit. That’s just not realistic. It’s a journey to PRACTICE the art of worship through how we take care of our bodies.
“Dining with the King” was also a calling for me personally to let go of my own struggles with binge eating so I could be more effective for the Kingdom. It has been a long time coming for me to finally let go, and it’s been a ride!! Haha

What is your job as a coach/counselor?

My job as a Psychology of Weight Management Coach is to guide people toward a healthy mindset about their bodies and food through truth, based on the living word of God and practical strategies they can implement into their lives. It’s not my job however to tell people exactly what they need to do, but more so to help equip people for a life long practice in wellness, to help them realize they can find the balance of overcoming unhealthy mindsets of food through their relationship with Christ and being proactive in educating themselves about wellness as a whole.

How did you learn about this program?

The “Dining with the King” program I created myself after receiving my AACC Certification from Lighthouse University. It’s a collaboration of what I learned over the time I spent getting my certification and research I had done on my own. I felt there was a need for a specific guideline, one in which there was structure for the client and the coach so I created an interactive guidebook filled with 4 sessions that I go over with my clients. This book is filled with, assessments, strategies for the future, encouragement, scripture and homework.

What drives you to help people with these struggles?

I know what it feels like to wonder if there is ever going to be hope. The hurt is real and I truly believe that it can keep us from living the life God has intended for us to live. And truly, nothing is more important to me then to lead people to Him. He’s the ultimate healer and to just be a small part of that process blows my mind. That’s what drives me.


Who benefits from your coaching?

I think at this point in my career women of all ages can benefit from this coaching. I want to expand with a team of coaches and my hope is that we can focus on men as well!! I know dozens of men who struggle just like us ladies. This struggle doesn’t discriminate about your gender.

How do you coach? (a series of meetings? Lessons? In person/not in person…etc.?)

I coach in person or over the phone. The program as a whole is in 4 sessions detailed below. There are different program options as I do provide a source of nutrition I believe is extremely beneficial for the client. People can do the program with our without the nutrition provided through IsAgenix.

Session #1
Going over Assessments:
-Multiple Assessments are given to discover exactly where you are in your health journey. I will also be coordinating with your Doctor (by request) so I can receive notes from them on your physical and blood panel, in case there are concerns such as the raise of diabetes you my not have realized was there. I am certified in specific areas of health that your Doctor might find you need some guidance with. They are:
Physical Fitness
Stress Management
Sleep
Brain Health
Chronic Pain Management
Men's and Women's Specific Health
We will also go over goals, motivation, the covenant prayer agreement and scripture based homework.

Session #2
Psychology of Weight Management and Nutrition:
-An in-depth look on God’s heartbeat about our health, food and purpose of honoring our bodies. Everything else comes secondary to this.
-In-depth personal coaching relating to your background with food as well as your current mental state with food and strategies for success for the future.
-A personalized nutrition plan and implementing IsAgenix. We will discuss what will work for you personally so that you can create an environment for yourself, your family and for your relationship with Christ without fear or discouragement.
This session also ends with biblical based homework and my favorite the "Dining with the King" Note card.
-Your program comes with products from IsAgenix in two options:
 A 30-day supply or 2 week supply

Session #3
Exercise:
This session we develop an exercise routine that fits your needs and discover how to implement your relationship with God with some of your routines.

Session #4
Closing session with the opportunity to continue session in the future if necessary. This is a time to re-evaluate goals, write new ones, fine tune your personal program ask questions.


What did it take to get your certification?

I chose to go through Lighthouse University and AACC because of my mentor Deborah Berry who is a Christian Counselor in Silver City, NM. We had discussed multiple times how many of my clients in my other health and wellness vocation including myself were struggling with emotional eating. It was the number one thing that was sabotaging my clients success as well as my own. I knew we weren’t dealing with the real issue for so many people. She contact me one day letting me know that I could receive a Wellness Certification that focused in part with the Psychology of Weight Management, I purchase the courses and did everything over the internet.

What changes have you seen in peoples lives?

What a great question!!
The change I see is hope and the knowledge that they can absolutely overcome anything with God’s help and leading. I’ve seen people also come to terms that they have a responsibility in this and that it doesn’t have to be daunting but empowering. My first client ever was actually one of my best friends. We cried a lot during our first session. It was such a cleansing feeling, she’s equipping herself, physically, mentally and spiritually and I can see that confidence in her. Especially with the realization that this is about a journey, about PRACTICING wellness, perfection is not required.

Hearty Veggie Soup

I'm posting this recipe at the request of Jessica and a few other friends.  Like my protein pancakes, this recipe was tossed together to use up some groceries before leaving town.  I didn't keep track of how much of each spice/seasoning I used, I will do my best to estimate.  BUT, your taste buds can do the measuring too ;-)


Ingredients:

1 Tbsp olive oil
4 Small potatoes
3 Garlic cloves
1/2 Yellow onion, diced
1 Cup diced carrots
2 Cans chicken broth (or veggie! I used Swanson's 100% natural)
1 Can black beans
1 Can (or small frozen bag) of mixed veggies
1 Can V8 veggie juice
1 Small can tomato sauce
2 Roma tomatoes
~ 1/2 Tsp Garlic powder
~ 1/2 Tsp Onion powder
~ 1 Tbsp Italian seasoning
~ 1 Tbsp Sugar
~ 1 Tsp Dried basil
~ 1 Tsp Dried thyme
~ 1 Tsp Dried oregano
Salt & Pepper to taste


Let's Cook!

1.  Wash and peel potatoes.  Cut into small cubes.  Bring pot of water to boil and add potatoes.  Cook until they are ALMOST cooked through all the way, this will depend on the size of your pieces.  Check with a fork!

2.  Drain potatoes and add to crockpot with chicken broth.  Turn crockpot on to low while you prepare the remaining ingredients.

3.  In a sauté pan add olive oil, garlic, onions and carrots.  Cook until carrots are almost cooked through but still have a bit of crunch.  Add this mixture to the crockpot, stirring ingredients together.

4.  Rinse black beans and add to crockpot.  Add mixed veggies, tomato juice and tomato sauce. Mix ingredients.

5.  Cut the tomatoes into pieces, size doesn't matter it's your preference. Add to crockpot.

6.  Add last 9 ingredients, the spices and seasonings.  Stir together, cover and let sit at low for 2 hours.  Check flavor and add more spices/seasonings if you wish.  Let sit on low for at least another 2 hours.  Enjoy!

**This makes about 12 cups of soup.  I portion it out into mason jars, let cool and freeze. This makes for a great fall meal, or easy lunch to go!

Chocolate Cinnamon Protein Pancakes

I woke up Tuesday morning with the intention of cleansing, but I felt so guilty not using up the food in our fridge before we head out of town.  I HATE wasting food, and didn't want to let the food we had in there to go bad while we are away.  So, instead, I decided to make some protein pancakes to use up our "almost TOO ripe" banana, and some eggs!  They turned out pretty good, especially with some chunky peanut butter and honey to top them off!

Ingredients:


2 Eggs
1 Egg worth of whites (3 tbsp of "All Whites")
1/4 Cup oat flour (I used Bob's Red Mill)
1 Scoop vanilla protein powder (I used Vanilla Isalean, purchase at alexfanelli.isagenix.com)
1 Ripe banana
1 Tbsp unsweetened cocoa powder
1-2 Tsp cinnamon
2 Tsp pure vanilla extract


Let's Cook!

1. Combine all ingredients in a bowl.  I decided to use an extra egg and vanilla last minute, for more moisture and flavor (already included in ingredients ;-) ).
                   
2. Use a non-stick pan at medium heat (level 5 on my stove). Let heat up for a couple minutes.  Drop 1/4 cup servings of batter onto pan.  Let cook until small bubbles start to form on top, and edges solitify.  Flip, and let cook for 1-2 minutes or until cooked through.
3.  Add your favorite nut butter for additional protein, and honey for some natural sweetness.  Enjoy!!

**This recipe makes about 6, 1/4 cup pancakes.  
**Each pancake is about 85 calories with 6g of protein!
**Your additional toppings will change that calorie and protein count.

Green Smoothies Galor!

These are a few of my favorite "green smoothies" that I like to blend up!  They aren't entirely filled with greens, but they are jam packed full of goodness and flavor!

Tips: 
I purchase my tropical fruit and berries frozen from Trader Joe's


I always have green tea steeping in a large mason jar in the fridge, my favorites are Celestial Seasonings honey lemon ginseng and Trader Joe's green tea.


"Want More Energy" is an energy supplement filled with vitamins A, C, B Complex, electrolytes and other nutrients. 


I suggest Fage total 0% Greek yogurt


If you freeze your bananas, be sure to peel them first.  This makes for an easier process when it's smoothie time!





Now let's blend!


Green Energy Smoothie
1 Cup pineapple
1/2 Banana
1 Cup kale, no stems
1/2 Cup vanilla almond milk
1 1/2 cup green tea
1 Tbsp chia seeds
2 Scoops orange "Want More Energy"






Pineapple Green Smoothie
1 Cup pineapple
1 Small green apple
1 Lime (Juice only)
1 Cup vanilla almond milk
1 Tbsp coconut oil
1/2 Cup green tea






Post Workout Green Smoothie
1/2 Cup plain Greek yogurt
1 Banana
1 Cup spinach
1 Cup kale
1/3 Cup pineapple
1/2 Cup green tea
2 Scoops orange "Want More Energy"

Mediterranean Dip

This is a delicious, and healthier alternative to the classic 7 layer bean dip.  Pair this with crackers, crostini, or veggies of your choice!

Ingredients:

1 container of hummus (flavor of your choice, I used plain)
1/4 cup chopped olives 
1 Roma tomato, diced
1 small cucumber, diced
1/4 cup diced roasted red peppers
2 tbsp diced roasted garlic
2-3 tbsp feta cheese

Let's Cook!

*Note: Many of these ingredients can be picked up already roasted at the olive bar at your local grocer!

1. Use a shallow serving dish and spread hummus along bottom.

2.  Sprinkle diced cucumbers, tomatoes, olives, red peppers, and garlic over top.  Sprinkle feta cheese after all other ingredients have been added.

3.  Serve with your favorite crackers, crostini, or an assortment of veggies.

4. Quick, easy, and delicious! Enjoy!

Food Ideas for Whole30

I don't know about you but coming up with meal/snack ideas for a Healthy Eating Plan has got to be the hardest part! As you all know I started the Whole30 Program on Monday but for those who are joining in I wanted to give you some of my food ideas!

Breakfast Ideas:
Hard Boiled Eggs
Green Smoothie (spinach, cucumber, frozen berries & water)
Spoonful of Almond butter
Eggs & Avocado

Snack Ideas:
Almonds or other Nuts
Avocado
Green Apple w/ Almond Butter
Berries & Almonds
Cut up Veggies (Prep ahead of time- you will thank me)
Make your own "Trail Mix"

Lunch & Dinner Ideas:
(Make & cut meats ahead of time)
Salad w/ chicken or steak
Meat w/ Roasted Veggies

I know these all sound repetitive and lame, but I'm not the most extravagant cook. Especially when I'm on a strict program I like to keep things simple and to the point. Salmon Lettuce Wraps

I threw these delicious wraps together one day in order to use up some left over salmon and rice.  It ended up being a winner!  The Asian flavors with the fresh crunch of a lettuce wrap are a perfect combo, and it's pretty healthy too!!  Little prep required!

Ingredients:

2 small salmon fillets
2 tbsp Soyaki sauce (find this at Trader Joe's)
2 tbsp liquid aminos (soy sauce alternative found at natural markets such as Sprouts)
2 tbsp honey
Bibb lettuce
1 cup brown rice (or white rice, or quinoa)
1/2 avocado
2 tbsp miso dressing (find this at Costco)

Let's cook:

1. Preheat oven to 350 degrees.  Place salmon fillets in glass baking dish.  Drizzle each fillet with the Soyaki, honey & liquid aminos.  Bake for about 15 min.  Bake time will depend on the size of your fillets, fish will "flake" off with a fork when done.

2.  Fill desired amount of wraps with about 1/4-1/2 cup of cooked rice or quinoa.

3.  Flake the cooked salmon into the wraps, top with a few slices of avocado, drizzle miso dressing on top.

4. Enjoy!
